Recently I’ve been trying to go out of my cooking comfort zone and try new recipes. One such that I tried recently was chicken tamales. I found the recipe on pinterest. You can find it here.
I followed the recipe for the mesa from the back of the container it had come in. Though it was for a much larger batch than I wanted to do so I had to kind of eyeball the quantities. At first I thought the dough was too wet, but once I let it sit for a little bit as I soaked the corn husks it turned out to be just fine.
I think I should have steamed the tamales just a little bit longer than the recipe called for. Most of it was perfect, but some of the inside dough was a little uncooked. Still for a first try I think I did pretty well! The hardest part of the whole experiment was definitely trying to wrap the dang things! 😀
For the chicken part of the tamales, I cooked a couple breasts in my crockpot with some leftover salsa that I had sitting in my fridge. As well as the other spices recommended in the above recipe.
To go with the tamales I made rice and refried beans. Though speaking of beans, I think I need to find a new recipe for them as they don’t turn out quite like I think they should. All in all it was a good experiment, and I’m excited to try again sometime soon!
