Weekend Cooking – Litha Sabbat Dinner

Weekend Cooking is a blog meme hosted by Beth Fish Reads. The 21st was the summer solstice, or Litha in the Pagan calendar. I tried to center the meal around fresh foods and vegetables of summer.

First I made a salad with lettuce and basil from my garden, I also added some leftover cucumbers and tomatoes and topped it with Parmesan and croutons.

The croutons I was able to make beforehand. I cooked them with olive oil, salt and Italian seasoning.

I also had some swiss chard from my garden that I cooked with butter and spices. I ended up really liking this because sometimes I find that swiss chard is a little bitter but the butter really made them tasty.

After marinating the fish in onion powder, paprika and black pepper, I grilled them the little grill that I have.

I was also able to cook up some zucchini and tomatoes, also topped with Parmesan. This is one of my favorite ways of zucchini.  It’s super easy to cook up too.

All in all this was an amazing dinner.

  1. It does sound like an amazing dinner, and a great way to celebrate the change in seasons. I sometimes cut my zucchini in half lengthwise and grill it at the same time I’m grilling fish. You can brush the squash with a little vinaigrette or just oil before grilling.
