Weekend Cooking is a weekend blog meme hosted by Beth Fish Reads. Today I’m sharing a meal I got to help make when I was on vacation in California. It was a really fun experience for a couple of reasons. One because I really enjoyed cooking with my girlfriend’s mom, who was the one teaching it to me. And second because I got to experience cooking with nuts I had never had before! I’ve now learned that I have a love for nuts.
The sauce was made with butter, honey and lime juice. I had never thought to combine those flavors before so trying the sauce blew my mind.
The Macadamia nuts were also really great, very sweet. They reminded me of cookies. I blended the nuts into a cumbly almost paste and then we breaded the fish.
The fish only had to cook for a little bit, which was nice, the whole meal took less than an hour to prepare. We also made a salad with walnuts and thin cut onions. It was the first time I’d had candied walnuts in a salad and now it’s probably my favorite thing ever. The dressing was a simple but delicious balsamic and oil vinaigrette.
