Weekend Cooking is a blog meme hosted by Beth Fish Reads. Today’s post is about a dinner that I made last month. I’ve made Mediterranean inspired chicken before, so I decided to do something similar but which out the meat for pork.
I bought thin cut pork chops to go with the meal. For the vegetables I cut up cherry tomatoes, chives, mushrooms, garlic, sweet peppers and kalamata olives. I also added Feta cheese on top.I seasoned the whole thing with salt, pepper and cumin. When I make this recipe with chicken I just throw everything together in one pan and bake it, so that’s what I did with the pork.
While this method works for chicken, I think if I were to make this recipe again I would cook the pork separately, though I’m still not sure what method I would use. I’ll be playing around with this recipe in the future!
