Weekend Cooking is a blog meme hosted by Beth Fish Reads. Today I’m sharing a recipe I experimented with last week. I’ve been really loving the combo of chickpeas and sweet potatoes, so I’ve been trying to build more meals around them. If you have any ideas for this let me know!
I wanted to work with a balsamic vinaigrette this time so I decided to cook the chickpeas and sweet potatoes with cumin and cinnamon, onion powder and of course salt and pepper. I’m not sure if I would this exact mixture next time but I did really like the way the cinnamon tasted.
The salad part was a mixture of greens form my garden and a little but of romaine. To that I added bell peppers, cranberries and some fresh zucchini. I also added some leeks but those I cooked with the chickpeas and sweet potatoes.
The end result was pretty tasty! Fresh, sweet and savory. I think it was a pretty good experiment. 🙂
