Weekend Cooking is a weekend blog meme hosted by Beth Fish Reads. This week I’m taking about a rice bowl that I tried out. You can find the link to the original recipe here.
I cooked up the pork like the recipe suggested, which turned out pretty well. I marinated mine just a little longer than the recipe. Next time I would cut up the pork smaller and work on making the pieces more crispy. I really liked that the video showed how to make Jamaican jerk seasoning.
The beans and rice combo didn’t have enough flavor for me, but that could be because I was in a hurry and not following the recipe exactly at that time.Ā I really enjoyed the dressing, though again I didn’t follow the recipe 100% and would next time add more honey.
I did not make the onion and pineapple salad part together, as I knew my family would be more hesitant to try it. Instead I put everything out for them to add individually and encouraged them to try the pineapple in the rice bowl. My girlfriend and I both greatly enjoyed it, Grant on the other hand was a little more hesitant. You’ll also note that I didn’t add avocado but exchanged it for cucumber, which I think added a very refreshing feel to the bowl.
Here is the end result. A great rice bowl that I would definitely make again!

I like the idea of a rice bowl. Being vegetarian, tofu would be a nice substitution for the pork. The rest of the recipe sounds delicious! thanks
