Weekend Cooking is a weekend blog meme hosted by Beth Fish Reads. Today I’m sharing my recipe for an easy vegetarian curry. Keep in mind that this is not an authentic recipe, this is just something that I make when I have a lot of veggies that need to be used up. It takes between 30-40 minutes total to make. First I usually start by making some rice in my rice cooker, that way it will be done around the same time as the curry. Then I start cooking.
I start the curry by sauteing onions, garlic, ginger and some spices. Usually turmeric and some garam masala. This time I added some leftover salsa because it wasn’t quite enough to put in the fridge, and wasn’t too much that it would alter the flavor of the curry. Once the onions were cooked enough I started added my veggies. This time the curry was made with sweet potatoes, tomatoes and cabbage. To that I also added some leftover roasted chickpeas and some black beans. I let everything cook for a few minutes and then I added coconut milk and some chicken broth. Then it’s just time to left everything simmer and cook up.
