Weekend Cooking is a weekend blog meme hosted by Beth Fish Reads. Today I’m writing a post about a new breakfast idea I tried out. I found it on Minimalist Baker, a blog that I’m discovering that I enjoy a lot. The breakfast bowl idea instantly appealed to me so I made it this morning and it was a hit with my family. I made mine more Asian flavors, whereas the original recipe seems to be more Mediterranean.
I used all the same ingredients, save for the potatoes. I didn’t have sweet potatoes but the ones I used worked just fine. And I cooked my cabbage (green instead of red) and kale in a Sesame Shiitake dressing, and the mushrooms in sesame oil.
The end result was fresh, sweet and salty and so so good. We all loved it and I will definitely be making it again.
