Weekend Cooking – What I Eat In A Day (20 Weeks Pregnant)

Breakfast was a pretty big meal, my appetite has definitely increased over the last few weeks. The exciting news is that I went in for my baby’s 20 week ultrasound and everything looks normal! We also found out we’re having a boy. I’m the oldest of mostly girls so I’m not sure if I’m prepared to be the mom of a boy but I’m so excited. Week 20 is almost done! My pregnancy app tells me I have 20 weeks left, but I keep telling myself I have between 19 and 22 weeks left. Let’s hope baby isn’t late!

But back to breakfast. 😀

I felt like I made a particularly good leftover breakfast yesterday morning. The evening before Dani and I made meat pies for dinner (a total of five pies for the whole family!) And this was the leftovers of one of them. It included pork jowl, ground beef, sweet potatoes, shallots, and some leeks. I cooked it up in the morning, threw eggs on top and added some pickled goodness to my plate.

I was in a mood to eat pickled foods yesterday, so for lunch I made myself a sandwich. Pickled eggs with kale, fresh cucumbers and a slice of leftover apple pie on the side. The pie was so good I couldn’t help myself.

For dinner my mom made fish tacos, which weirdly I haven’t had in forever despite how much I love them! She uses fish sticks, one of my siblings made a salsa, there was grated cheese and some grated cabbage as well. Also I got out my pickled peppers and onions which were a big hit! I feel I’ve finally perfected my pickled onions with a brine that mixes both rice wine vinegar and red wine vinegar.

My breakfast isn’t always the most healthy so I would love tips from moms on what to make myself! What did you eat for breakfast while pregnant?

  1. I find that I like to have a green smoothie ( banana, wild blueberries, spinach or kale plus some protein powder) first thing in the morning. Then an hour later I have steel cut oatmeal that I make every other day in the Instant Pot.

  2. I generally eat oatmeal with fruit, yogurt with fruit, and sometimes scrambled eggs. I’m not very inventive when it comes to breakfast. Good news on your checkup!

  3. I don’t remember what I had for breakfast when I was pregnant. Probably pretty much just cereal! What I can say is that I ate a lot healthier when I was pregnant.

  4. I’m on a steel-cut oatmeal kick right now. I make a batch of it and portion it out for my breakfasts for the work week. I put different toppings on it to vary it, and always have a big dish of fresh fruit too.
