Weekend Cooking – Fish Night

Weekend Cooking is a weekend blog meme hosted by The Intrepid Reader and Baker. Today I’m sharing a meal that I made last night. On Fridays my family likes to make fish meals, and I decided that they all needed to try a favorite recipe of mine. Macadamia nut crusted fish. I think I’ve posted about it before, but the last time I made this meal it was for 3 people not 12. 😀

This time when making the meal I toasted my macadamia nuts in the oven first, and I bought tilapia instead of halibut. Halibut is a definitly more spendy and I was just buying from whole foods and honestly the tilapia looked like the best quality. For side dishes I made spaghetti squash with pesto (forgot to take a picture of it!) and a cabbage, spring mix and carrot salad.

Everyone besides the two youngest kids (11 and 6) loved the meal. Next time I’ll have to make something to get the kids excited. 😉

  1. I need to try macadamia nuts on fish. We usually go with cod or another mild fish when we’re not having salmon.
